Egg Curry Episode #38 on youtube Pias School
  • The dish can be served on its own with a biryani or pilau,and a good accomplishment to fried whole fish .

  • Serves 3-6

  • Boil 10 large eggs for 15-20 minutes. Let it stand in cold water for 10 minutes. When the egg hardens,peel skin and apply 2 tspn turmeric and salt. Take oil in a nonstick pan and fry till golden brown.
  • ​3 potatoes diced triangular and fried till golden brown 
  • 10 ml/ 2 tspn white poppy seed - optional 
  • 10 ml/2 tspn white sesame seed -Optional 
  • 10 ml/2 tspn coriander seeds - optional 
  • 30ml-/2 tblspn dessicated dry coconut -Optional
  • 3 tblspn oil , 1 tblspn ghee
  • 6 dried Red Chillies
  • 2 tspn Red Chilly powder {Kasmiri is not too hot}
  • 2 tspn Paanch Phoron
  • 1 large onion chopped 
  • 1 garlic 1 ginger chopped finely with onions
  • 1 large tomato chopped or tomato puree
  • Whole Spices-1 Bay Leaf ,1 Cinnamon Stick; 2 laung,2 cardamom
  • 1 Bunch of Scallion chopped 
  • 1 Bunch of coriander leaves chopped
  • 1.5 ml /1/4 tspn asafoetida
  • 2 tablespoon Ginger Paste
  • 2 tablespoon Garlic Paste
  • 3 tspn coriander powder 
  • 3 tspn cumin powder
  • 3 tspn white pepper powder
  • 2 tspn Gram Flour-optional

1.Heat a frying pan and dry fry the poppy,sesame,and coriander seeds for 3-4 minutes.Add the dessicated coconut and dry-fry till it turns brown.

2.Cool and grind the ingredients in a pestle and mortar using a food processor.

​3. Take a little of the tomato juice and mix with the gram flour to make a smooth paste.Add the chillies. Saute add the onion and saute for 5 minutes.Add the tomatoes and saute for five minutes.Add  the ginger-garlic paste, red chilly powder, turmeric powder, the coriander, cumin and white pepper powder and fry {bhuno} all the spices for 15- minutes till oil seperates.

4. Add the potatoes and mix all the ingredients until well combined .Stir continuously.

5.Add 8 cups water and let the mixture boil . Add the boiled eggs, scallion and coriander leaves and cover with the sauce. 

5. Heat  the oil in a fry pan, and fry the remaining ingredients until the chillies turn dark brown.Pour the spices and oil over the Egg curry fold the Ingredients together and reheat. Serve with hot Rice 

Cooks Tip -Gram flour or besan is made from ground chick peas .It is less starchy than wheat flour. and used extensively in Indian Cooking.For a recipie like this plain all purpose flour can be used
