CATFISH in Indian Style 
4(6-61/2)ounce catfish
2 tablespoon PIA Essence
2 tablespoon minced parsley
2 tablespoon minced garlic
3/4 cup cornmeal
1/4 cup All Purpose Flour
1/2 teaspoon sali 
1 cup vegetable oil
Lemon Wedges for serving
Marinate Catfish 2 hours back with 
2 tablespoon ginger-garlic paste.
1 tablespoon salt 
1 teaspoon red chilly powder 
1 teaspoon turmeric powder 
1 teaspoon Ajwain (Carom Seeds)
​1 teaspoon thyme

PIAS ESSENCE SEASONINGS ALSO CAN BE ADDED IN CORNMEAL
21/2 tablespoon paprika
2 tablespoon salt
2 tablespoon garlic powder
1 tablespoon pepper powder
​1 tablespoon cayenne pepper
1 tablespoon Italian seasoning 
1 tablespoon dried oregano/dried thyme
1 teaspoon Ajwain (Carom seeds)
To make catfish batter
1 Cup Buttermilk with salt and pepper.
1-2 eggs beat in a bowl 
Method Of Preparation :Mix cornmeal, flour, salt , red pepper,garlic powder and black pepper in a shallow bowl.Dredge catfish fillets in flour mixture shaking off excess.Fill a deep fryeror large deep skillet half full with oil and heat to 375 degrees. Fry fish 3-4 minutes on each side or until golden brown .Drain on paper towels .Or take Catfish fillets put in egg and milk mixture layer on top of cornmeal pressing it flat with palm of hand. Dust off excess cornmeal.When it fries it gives it an even shape.
